About Us

Rustic Rock Maple is an Organic Certified, single source, small batch maple syrup producer. We are located in the Southwestern corner of  Pennsylvania in Washington County.  

In late winter of each year the maple trees in our hidden hollows are tapped producing fresh sap that is boiled into Pure Maple Syrup.

Some folks are surprised to learn that maple syrup is not just made in the Northeastern states and Canada but can be made right here in Southwestern Pennsylvania.

Our Organic Maple Syrup and Sugar are made in small batches with great attention to detail. 

It is our privilege to offer you this pure maple goodness as one of nature's most coveted flavors.

Currently at Rustic Rock Maple we tend to 2000 taps in our sugarbush. We tap Sugar Maple, Black Maple and Red Maple trees.  The trees are tapped in late winter.  The sap from these trees in our area generally runs from early February to late March when the temperature is below freezing at night and above freezing in the day. Depending on the weather and what Mother Nature gives us we usually process about 60,000 gallons of sap and make  900 to 1000 gallons of Pure Maple Syrup each season.

When the night temperatures no longer go below freezing and day temperatures rise into the 60's the syrup season is winding down. When buds start to form on the trees  as spring progresses the sap changes and the season is over.  The taps are then pulled from the trees and before the next season comes around the current tap hole will be healed over.  The trees are not harmed in any way. They produce more sap than needed and we are only taking a small percentage of the tree's sap to make our syrup.

Depending on the sugar content of the sap it can take between 40 to 80 gallons of sap to make 1 gallon of Pure Maple Syrup.

When you buy Organic you are guaranteed that no pesticides or chemicals are used near or in our sugarbush or in our processing.  Following Organic guidelines helps to promote forest biodiversity and create a quality habitat for wildlife.  

Making Granulated Maple Sugar

To make pure granulated maple sugar we start with  our pure maple syrup and boil it to 45 to 50 degrees above the boiling point of water.

  • Once it has reached the perfect temperature we pour the very hot syrup into a mixing bowl and begin vigorously stirring.

After 4 to 5 minutes of vigorous stirring and as the syrup crystallizes clouds of steam escape the mixing bowl. When all the moisture is removed from the cooked syrup just the Granulated Maple Sugar remains.

The granulated maple sugar is sifted,  cooled and sifted again. It is then packaged into bags or shaker containers and ready to use. It is great as a topping on fruit, cereal, toast, sweet potatoes, coffee and tea.  

Make a healthier choice  and substitute your white sugar with Maple Sugar!  Substitute one for one. Sprinkle it on toast, cereal, fruit, applesauce, bacon, pork chops and roasts , salmon or in coffee and tea.   Use it in your baking as it is great in zucchini bread, chocolate chip cookies, cakes and more! Granulated Maple sugar adds a delicate maple flavor that you will love!
