Maple tapping season typically begins by early February, or when temperatures consistently alternate between freezing nights and warm above-freezing days. Our maple farm in PA features 3000 taps set in a diverse woodlot with a mix of Sugar Maples, Black Maples, and Red Maples. Pictured is sap traveling in 5/16" lateral
All the tubing from our 3,000 taps is designed to flow downhill to our pump house, where the sap is collected and filtered before being transported to the sugar house.
We can collect up to 77,000 gallons of sap per season. Pictured above is sap running into a tank in the pump house, which can reach peak flows of over 500 gallons per hour. The amount of maple syrup produced from this sap depends on its sugar content: the higher the sugar concentration, the more syrup you can make.
We can produce up to 1,100 gallons of pure organic maple syrup during a good season. When the steam clouds roll in, as pictured above, you know it's syrup time at our Rustic Rock location!
