Glazed Vegies

   Glazed sweet potatoes

4 sweet potatoes

2 tbsp butter

1/4 cup pineapple juice

1 20oz can sliced pineapple

1 cup pure maple syrup

Boil potatoes in skins until tender

Cool Slightly

Peel potatoes and slice 3/4 " thick

Lay a slice of sweet potato over a slice of pineapple and lay the paired slices in a baking dish.

Heat the maple syrup and pineapple juice in a sauce pan and add butter.

Pour liquid over the pineapple and potatoes and set in moderate oven until done. Baste often.

Grilled or Broiled Salmon

Maple Teriyaki Salmon Filet 

1/3 cup apple juice

1/3 cup pure maple syrup

3 tbsp coconut aminos

2 tbsp finely chopped onion

2 garlic cloves, minced

4 6oz salmon filets

In small bowl, whisk the first five ingredients until blended. Remove 1/2 cup for basting, cover and refrigerate.

Pour remaining marinade into a large resealable plastic bag.

Add salmon, seal bag and turn to coat.

Refrigerate 1 to 3 hours.

Drain salmon, discarding marinade bag.

Moisten a paper towel with cooking oil, using long-handled tongs, rub on grill rack to coat lightly.

Place salmon on grill rack, skin side down.

Grill, covered, over medium heat or broil 4 inches from heat for 10 to 12 minutes or until fish flakes easily with a fork. 

Baste frequently during the last 4 minutes.

Glazed Carrots

Roasted Brussel Sprouts

Maple Glazed Carrots

1lb cooked carrots

1 tbsp orange juice

1/4 cup pure maple syrup

Mix orange juice and maple syrup in small mixing bowl. 

Pour over cooked and drained carrots.

Simmer for 5 to 10 minutes.

Sprinkle with ginger if desired.

Roasted Brussel Sprouts

Maple Roasted Brussel Sprouts

5 slices of bacon

1/2 cup pure maple syrup

3 lbs brussel sprouts

1 tsp salt

Heat oven to 450 degrees.

Cut bacon crosswise in 1/2 inch strips and scatter on a large baking sheet and roast 10 minutes, stirring twice until fat is rendered and bacon is crisp.

Remove bacon to paper towel to drain.

Trim and halve brussel sprouts lengthwise(if larger quarter them)

Toss brussel sprouts in bacon drippings with maple syrup and salt.

Roast 20 minutes, tossing twice.

Stir in bacon pieces and continue to roast 3 to 5 minutes until sprouts are golden and crisp tender. 

Serves 12.

Roasted Brussel Sprouts

Kielbasa

When making fresh pies, substitute maple sugar for the refined white sugar.  It adds a delicate touch of maple flavor and really compliments peach and apple pies when cinnamon is added. It make a luscious apple crisp!

Maple Kielbasa Bites

12oz Kielbasa

1/4 cup pure maple syrup

2 tbsp Dijon mustard

Slice the kielbasa and cook to perfection in frying pan.

Stir in mixture of maple syrup and mustard

and stir until well coated and hot.
